10 Summer Recipes
Now that we’re almost halfway through August, summer is almost over – but don’t worry, it’s not gone yet! We still have a few great weeks of juicy tomatoes, fresh zucchini, sweet corn, and our favorite fruits. So, I thought it would be fun to compile a roundup of my favorite summer recipes to make before this season is over. Hope you like them!
10 Summer Recipes
1. Basil Marinated Chicken
I made this basil marinated chicken on a total whim with a few ingredients I had on hand. I hoped it was decently good – but as soon as it hit the grill, I knew I had made a winner! This recipe is super simple but packed with flavor and perfect for anyone who is bored with plain grilled chicken. Highly recommend making it with this strawberry salad!
2. Summer Pasta with Zucchini
This easy pasta dish is a great way to use up summer zucchinis before the season is over! I made it vegan by using an almond based ricotta, but you certainly don’t have to. You can also easily make it gluten free, too!
3. Stone Fruit Crumble
Who else loves summer fruits?! Use them in this stone fruit crumble and this blueberry crumble!! I personally like these recipes as is, but if you prefer more crisp on top, just double (or triple!) the crumble portion of the recipe!
4. Cilantro Lime Chicken Tacos
These cilantro lime chicken tacos with grilled pineapple salsa are fresh and flavorful and taste like summer!
5. Sweet Potato Gnocchi
Sweet potato, corn, zucchini are a match made in heaven – and this recipe comes together in less than 30 minutes! If you have Trader Joe’s sweet potato gnocchi in your freezer, add this to your weekly meal plan ASAP.
6. Grilled Pizza
If you haven’t grilled pizza yet this summer, pick some dough up from your local pizzeria and make it happen! We love topping ours with prosciutto and tons of grilled veggies!
7. Pesto
Do you have lots of basil in your garden? Make pesto! You can either follow my regular recipe with cheese or make my dairy-free/vegan version! Both are absolutely delicious crowd favorites!
8. Yogurt Marinated Chicken
Did you know that marinating chicken in yogurt can naturally tenderize the meat? It’s true! This recipe uses that method, plus a delicious tzatziki sauce to go on top!
9. Zucchini Chicken Enchiladas
Looking for something different to do with your zucchinis? Thinly slice them, make a delicious enchilada filling, and roll them up! While they obviously don’t taste like tortillas, even carb-lovers will love this recipe.
