Happy Friday!! For this roundup, I thought I’d take a break from Chicago topics and go for something super relevant for me – and probably relevant for you guys, too. Have you ever thought “What should I make for our friends that are coming over for dinner?!” Umm, me too. So… let’s talk dinner party recipes!
On Wednesday, we had our friends Scott and Carly over for dinner… and then I found we were also having another couple over for dinner on Friday (TONIGHT!). But instead of freaking out about what to make, I decided to make it easy on myself. Wednesday was taco night and tonight is lasagna night! Crock pot recipes for the win! Turns out, after a looking at some of my favorite blogs, talking to my Mom, and looking at past pins – I realized that there are tons of great low stress recipes out there for double date dinner parties. PHEW.
Dinner Party Recipes
This is one of my favorite winter recipes – but it’s also a great option when you’re cooking for a group! If this looks good to you but you’re cooking for meat lovers, don’t worry! I’ve tried it with ground turkey and it worked really well. Just brown the turkey (or beef!) on the stove and be sure to drain any liquid/grease before you add it to the lasagna layers.
Also, if you need a little extra push, a reader named Jennifer messaged me last night and said, “So I just made your crockpot zucchini lasagna. Holy smokes! I could have gone for a third maybe four servings 🙈” That’s what I like to hear!!
Healthy Chicken Taco Bowl (that you can serve as tacos, too!)
As I mentioned, I made a variation of this recipe on Wednesday – except tacos instead of bowls! I cook the chicken/peppers/onions the same way, and put out tortillas, cheese, lettuce, guacamole, and black beans. Super easy, and always a crowd pleaser!
I’m not a big meatbloaf gal, but I trust pretty much anything Monique makes (TRUTH). Plus, I love that this uses turkey instead of tons of red meat!
I grew up loving Italian style stuffed peppers, but as soon as Adam tried these Mexican inspired Whole 30 peps, these became the favorite. They’re super flavorful, the colors are pretty, and they make GREAT leftovers if your group doesn’t eat them all!
This is one of Half Baked Harvest’s older recipes – but if you like eggplant, you’ll LOVE these boats! They’re also way easier to make than eggplant parm. Win!
My friend Danielle actually introduced me to this recipe over a girls weekend a few years ago. There was a huge snowstorm, so before the roads were closed, we got groceries and then hung out/played games all day while this cooked in the kitchen. You guys know I don’t eat a lot of pork, but this sauce is AMAZING. It also smells like heaven and makes a ton of food – aka perfect for both a snowed in girls weekend or a dinner party!
Of course a recipe for enchiladas had to be on this list – and Pinch of Yum never disappoints! I particularly love that this recipe doesn’t require a ton of ingredients. And you could totally prep this earlier in the day and bake it right before guests come over for a low stress dinner!
Ok if I’m being honest, I always follow my family recipe – but that post is so old and the photos are SO bad 😂Guess I need to update that one! Having friends over to watch Sunday Football?! Whether you like it or not, it’s that time of year again – and this chili is the perfect easy dinner to serve! Along with tons of snacks, obviously.
