5 Healthy Easter Desserts
Can you believe that Easter is on Sunday? Umm, I’m sorry WHAT?! For some reason, I’ve been completely oblivious to the increase in candy, bunnies and colored eggs… but regardless, I’m excited to go to Church (it’s been a while, oops) and spend some time with my family. And since Easter isn’t really Easter without sweets, I thought I’d round up 5 of my favorite healthy desserts! This way, you can indulge a little bit… without all the guilt that comes from eating chocolate eggs from your nephew’s basket ?
Let’s take a peek:

1) Healthy 4 Ingredient Reese’s Eggs by Ambitious Kitchen
If there’s one candy that I have trouble turning down, it’s Reese’s. The combo of peanut butter and chocolate? Too good. Luckily, Monique came up with this amazing recipe and I’m pretty sure it’s going to be make all my dreams come true. YUM.
2) Raspberry Thumbprint Cookies by Hummusapien
My mom and Nana used to make thumbprint cookies… but I’m pretty sure they were FAR from healthy. On the other hand, these are flourless, vegan and paleo! Thanks, Alexis!
3) Magic Coconut Oil Fudge by Lake Shore Lady (that’s me!)
Okay, is it weird to include my own recipe in this roundup? To be fair, this stuff IS actually magical! All you need is 5 ingredients and some patience. Mmmmm.
4) 7 Ingredient Vegan Cheesecakes by Minimalist Baker
I’ve actually made these before and it’s one of my favorite healthy desserts. The flavor definitely mimics a light cheesecake, and I loved eating them right out of the freezer. I’m also dying to make her White Chocolate Peanut Butter Eggs, too!
5) Raw Carrot Cake Slices by The First Mess
I’m a big fan of carrot cake, but I’ve never seen a raw AND vegan version look this freaking good. Then again, The First Mess never disappoints. Yum yum yum.
