pinch of salt
1 tsp cinnamon
1 tsp flour
2 tbsp sugar
1 tsp bourbon
1/2 tsp brown sugar
2 pre-made pie shells
Cut the apples into small pieces (about the size of corn kernels). Add lemon juice, salt, cinnamon, flour, sugar, bourbon, and brown sugar.
Stir to combine.
Roll out the dough, use a glass to cut the dough into rounds. Add apples to the center.
Top with another round of dough.
Seal the edges with a fork.
Line them up on a sheet pan. Cut a slit in each one. Whisk one egg yolk with a little water. Top the pies with a little egg wash and brown sugar.
Bake at 400 degrees for about 15 minutes.
This recipe makes 30-36 pies.
