Apple Mug Cake with Hudsonville Ice Cream

You’re having a cozy night at home. You have your favorite sweatshirt on and Netflix is all queued up. The only thing missing? A sweet treat! Don’t worry, this apple mug cake can be ready in less than 5 minutes. Yes, you read that right!
If you’ve never made a mug cake, let me tell ya – they’re awesome. Instead of dirtying a bunch of dishes and being tempted by a whole cake for days, this only requires a few ingredients and minimal cleanup for a perfect single serving of goodness.
And as soon as I tried Hudsonville Ice Cream’s Limited Edition Cinnamon Sugar Cookie flavor, I knew this ice cream would be perfect in this recipe. I melted 2 tbsp of it into the batter itself to bring some sweetness and moisture to the cake… but of course, you have to add some on top, too. I mean, brown sugar ice cream with caramel and cinnamon sugar shortbread cookies with a warm apple cake? Yeahhhhh, that’ll do just fine ?
How To Make Apple Mug Cake
Ingredients
(For the apples)
1/3 cup of chopped and peeled gala apples
1/4 tsp all-purpose flour
1/2 tsp maple syrup
1/4 tsp pumpkin pie spice or cinnamon
(For the cake)
4 tbsp all-purpose flour
2 tbsp Hudsonville Limited Edition Cinnamon Sugar Cookie Ice Cream
2 tbsp milk
1/2 tbsp maple syrup
1/4 tsp baking powder
1/4 tsp pumpkin pie spice or cinnamon
Instructions
- Peel and chop the apple into small pieces. Add to mug with 1/4 tsp flour, 1/2 tsp maple syrup, and 1/4 tsp pumpkin pie spice. Stir to combine.
- Microwave for 30 seconds.
- Remove from the microwave and add 2 tbsp of ice cream. Stir the ice cream in with the hot apples to melt it. If the ice cream is still very frozen, pop it in the microwave for 5-10 seconds to soften more.
- Add the rest of the flour, milk, maple syrup, baking powder, and pumpkin pie spice to the apple/ice cream mixture. Stir to combine.
- Microwave for 1 minute and 30 seconds. (Some microwaves are different than others, so you might need to adjust this time slightly!)
- Top with more pumpkin pie spice or cinnamon and a big scoop of Hudsonville Cinnamon Sugar Cookie Ice Cream!
Craving pumpkin instead?
If you want to swap the apples for pumpkin, it’s very easy! The biggest difference is that you’ll melt the ice cream first. Then add your pumpkin and the other batter ingredients. Just to be clear, here is what you will use:
2 tbsp Hudsonville Limited Edition Cinnamon Sugar Cookie Ice Cream
4 tbsp all-purpose flour
2 tbsp milk
1/2 tbsp maple syrup
1/4 tsp baking powder
1/4 tsp pumpkin pie spice or cinnamon
2 tbsp pumpkin puree
Once the ice cream is melted, stir all of the other ingredients together and microwave for 1 minute and 30 seconds. Top with more ice cream!
