Asian Rice Bowls with Ground Turkey
As you can probably tell by my instagram stories and weekly meal plans recently, I like to make a few full blown recipes (usually ones that create leftovers!)… and then the other nights of the week are all about what’s easy and what we have on hand. This recipe was born from the latter! We were in the mood for some sort of Asian rice bowl and I thought why not use the ground turkey we had in the fridge?
Turns out this combo is absolutely delicious and we’ve already made it twice this quarantine! I think Adam actually said “why haven’t you made this before?” ? Honestly, I’m surprised I hadn’t thought of it sooner since it’s VERY similar to my lettuce wrap recipe that I totally forgot about! (Another great weeknight meal!)
Also, like pretty much all of my recipes, this can be customized based on what you like or have in your fridge. Don’t have hoisin sauce? Add teriyaki instead! Don’t have sriracha? Add red pepper flakes! Don’t have broccoli? Add whatever other veggies you have around! We put the finished product over brown rice, but white rice, jasmine rice, quinoa… any grain will do. Asian Rice Bowls with Ground Turkey
ingredients
1 tablespoons olive oil
1 onion, diced
4 cups broccoli, roughly chopped
1 bell pepper, roughly chopped
1 pound ground turkey
1/3 cup soy sauce
2.5 tbsp sriracha
1/4 cup hoisin sauce
1 tbsp cornstarch, mixed with 3 tbsp water
White or brown rice

Add olive oil to a large pan over medium heat. Add onion, peppers and broccoli. Stir together and then cover and cook for about 5 minutes. Uncover and cook for another 3-5 minutes.

Make room in the middle of the pan, turn the heat up a little and add the turkey. Break it apart as it cooks.

While that is cooking, mix the soy sauce, hoisin sauce, and sriracha sauce together.

When the turkey is done cooking, whisk 1 tbsp of cornstarch into 3 tbsp of water. Add that to the sauce mixture and pour that onto your pan.

Stir everything together and make sure the sauce coats the meat and vegetables. Allow the sauce to thicken for about 3 more minutes.

Serve over white or brown rice. Garnish with fresh green onions and/or sesame seeds if you have them!
