Asparagus Naan Pizza
Weeknights are tough – most of the time you’re rushed, you haven’t gone grocery shopping, you need something quick – and that’s exactly how I came up with this recipe! I wasn’t even going to take pictures of it, because there’s not a whole lot of technique involved… but that’s what makes it so great! Sometimes simple is best, after all 🙂
Ingredients
one bunch of asparagus
2 cloves garlic
1 tbsp olive oil
1/2 tbsp balsamic vinegar
salt and pepper
sun-dried tomatoes
feta cheese

Preheat your oven to 400 degrees. Cut your asparagus spears and spread on a lined baking sheet. Coat with olive oil and sprinkle with salt and pepper.
Add roughly chopped garlic on top and bake in the oven for about 10 minutes.
Brush a little bit of olive oil over the top of your naan. Place asparagus on top and sprinkle with balsamic vinegar. Place back in the oven for another 5 minutes.
Take it out and sprinkle with roughly chopped sun-dried tomatoes and crumbled feta cheese.
And that’s literally IT! A no stress meal that’s perfect for your busy week. And it’s pretty 🙂

Yum! This looks fabulous! I just had an asparagus melt the other day at a brewery and it was fabulous! I love using it in some other matter than just a side vegetable.
