Banana Chocolate Chip Donuts
Don’t you want a bite of that?!
This isn’t my recipe, but I wish it was!! I found it on Janie’s Kitchen, and we only made a few adjustments- but that’s only because we didn’t have an electric mixer. We also skipped the cinnamon sugar coating. Honestly, it just didn’t need anything else… they are perfect little treats as soon as they come out of the oven!!
Here’s how you make them!
Ingredients
1 cup mashed ripe banana (2 small bananas)
1/2 cup Raw Cane Sugar
1/2 cup Fat Free Greek Yogurt
1/4 cup melted Earth Balance (or butter)
2 Eggs
1 tsp Pure Vanilla Extract
2 cups All Purpose Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp salt
1 cup chocolate chips
Preheat the oven to 325 degrees.
Mash the bananas with a potato masher or a fork.
Add the sugar and mix until incorporated.
Add the greek yogurt, and you guessed it- stir it up!
Add melted earth balance, vanilla, and 2 eggs.
Stir in the flour, baking soda, baking powder, and salt.
Almost there…
Don’t forget the chocolate chips!
Now we’re in business.
Spoon the mixture into a bag, cut a hole in one corner, and pipe the batter into a greased donut pan. (I describe this more here and here!)
Bake for 12-15 minutes.
Let them cool on a wire rack for a few minutes before serving.
Mmmm.

Those look delicious. Have you been to Glazed and Infused? I keep meaning to and getting distracted, but perhaps it's better that I avoid a gourmet doughnut shop while getting in shape for the summer 😉
