Banana Energy Bites
Everyone likes to have a little treat every now and then, right? Well, what if I told you that you could make these and they would be 100% guilt free?! They have no sugar, no flour, no eggs… and therefore, no guilt!
I must put a disclaimer in though- these aren’t cookies. They will not taste like ooey gooey chocolate chip cookies. I like to think of them as energy bites. Perfect for a mid morning or mid afternoon snack!
This recipe is adapted from The Skinny Fork.
Here’s how you make it!
Ingredients
2 ripe bananas
1/3 cup peanut butter
2/3 cup unsweetened applesauce
1 tsp vanilla
1/2 tsp salt
1/2 tsp cinnamon
a pinch of ground cloves
a pinch of ground nutmeg
1 1/2 cup old fashioned oats
1/4 cup raisins
a handful of chocolate chips
1/2 cup unsweetened shredded coconut
Preheat the oven to 350 degrees.
When I made these, the bananas I used weren’t quite ripe enough. The cookies/energy bites still turned out fine, but if you want the final product to be sweeter, make sure you use ripe bananas.
Combine bananas, applesauce, vanilla, peanut butter, salt, cinnamon, cloves, and nutmeg.
Mash the bananas and mix throughly. Add oats, raisins, chocolate chips, and coconuts. Mix until combined. Line a baking sheet with parchment paper and drop a spoonful of dough for each cookie.
Bake for about 20 minutes and enjoy!
