Barley with Tomatoes, Spinach, and Chicken
I had never cooked with barley until I saw this recipe. I love one pot meals, so it’s right up my alley. Plus barley is good for you! It’s low in fat, high in fiber, and helps lower cholesterol. Not bad, right?!
Ingredients
1 onion
2 cups barley
28 oz can crushed tomatoes
1 cup dry vermouth
olive oil
2 cups water
2 raw chicken breasts
1 package baby spinach
1/2 cup parmesan cheese

Thinly slice the onion and sauté in olive oil.
Once the onions are translucent, add the vermouth.
Once the vermouth has cooked off, add the tomatoes, water, and barley.
Cut the chicken into bite sized pieces and add it right in.
Bring to a simmer and cover for about 40 minutes.
Uncover and taste the barley. Keep simmering if it needs more time.
Mix in the parmesan cheese and spinach. Season with salt and pepper.
And serve!
Top with parmesan! I know, I’m so predictable…

Finally got around to making this and loved it! I substituted the vermouth for white wine and parmesan for pecorino because that's what I had on hand but it worked great. Love this dish! I have a feeling it'll become a staple in the fall and winter months 🙂
