Basil Chicken Marinade Recipe
Happy Friday, friends! I am SO excited about this post because this marinade has become our favorite way to cook chicken this summer. I came up with it one night when we decided to have friends over at the last minute and I wanted to use what we had on hand. We had chicken in the fridge, so I went outside and picked some basil from our garden, combined it with a few other ingredients… and it was a HUGE hit! Since then, we’ve made it at least 3 more times, with no plans of stopping anytime soon! I hope you guys love it as much as we do!
Basil Chicken Marinade Recipe
Ingredients
1/4 cup olive oil
1 cup fresh basil
1/4 cup balsamic vinegar
3 garlic cloves
1/2 tsp salt
1/4 tsp pepper
1-2 lbs thin chicken breasts
Instructions
1. Combine all ingredients in a blender and pulse until smooth.
2. Add chicken to a bowl and pour the marinade over the top. Make sure all of the chicken is coated in the mixture. Let it marinate for at least 30 minutes – but I prefer letting it sit for a few hours before cooking.
3. Preheat your grill to medium high.
4. Remove the chicken from the marinade and cook for about 4-5 minutes per sidebar until your chicken is cooked through.
5. Remove from the grill and enjoy!
What To Serve With Basil Marinated Chicken
We served ours with a green salad and corn on the cob – but you can definitely have fun with side dishes since SO many flavors go with this marinade. Here are a few of my favorites!
Strawberry and Farro Salad
This salad is our current favorite – which is why it’s pictured on the plate with this chicken!! It’s super simple to throw together and the combination of flavors and textures is SO satisfying. Highly recommend!
Tomato, Corn, and Mozzarella Salad
If you’re looking for a salad that screams summer, this one is it! All you need are a handful of ingredients and a few minutes, too. So easy!
Summer Quinoa Salad
If you are looking for lunch leftovers, I’d pair this chicken with my summer quinoa salad because it’s such a delicious combination and both keep really well in the refrigerator!
