Beet Salad Recipe with Farro and Goat Cheese
This beet salad recipe with farro, goat cheese, and arugula is simple and delicious!
For some reason I have been craving beets in a major way recently. Maybe it’s because we recently got Purple Martin cocktails to-go from The Warbler? (That cocktail has beet juice in it and it is INSANELY good.) Or maybe it’s just because I only want really hearty salads in the winter? Whatever it is, this beet salad recipe with nutty farro, peppery arugula, creamy goat cheese, and a simple vinaigrette has been my favorite lunch recently.
Besides the time it takes to cook the farro, this salad comes together in just a handful of minutes with just a handful of ingredients. Plus, it can be eaten cold, which makes it ideal for meal prepping before the work week. Yum yum yum!
Beet Salad Recipe with Farro and Goat Cheese
ingredients
2 cups cooked farro
3 cooked beets (Love Beets is my favorite brand!)
2 cups arugula
2 oz goat cheese, crumbled
3.5 tbsp apple cider vinegar
1/3 cup extra virgin olive oil
1 tsp dijon mustard
1 tsp honey
salt and pepper to taste
instructions
1. Cook farro according to the instructions on the package. Cool and set aside.
2. Add apple cider vinegar, extra virgin olive oil, dijon mustard, honey, salt, and pepper to a mixing bowl. Whisk to combine.
3. Cut your beets into bite sized pieces. Add those to the bowl with the dressing.
4. Add the farro and arugula to the bowl and toss to combine.
5. Taste to see if you need more salt and/or pepper.
6. Crumble goat cheese on top and gently mix everything together.
7. Enjoy immediately and/or store in an airtight container in the refrigerator!
Where To Find Cooked Beets
I’ve been able to find Love Beets at Mariano’s, Whole Foods, and Target – and Trader Joe’s has a really great Peeled & Steamed Baby Beets as well. You can also look for canned beets, but I personally don’t think those taste nearly as fresh as the cooked beets that are available in so many refrigerated produce sections now.
If you have trouble finding them at your local grocery store, you can also cook them yourself! The Kitchn has a great recipe for how to roast beets in the oven. While it takes some time, it is very simple.
Also, if you’re new to farro – it is sooooo delicious! It’s a little chewy with a slightly nutty flavor that pairs perfectly with the beets. Plus it’s got a TON of nutrients to help you power through your day! I get my farro from Thrive Market, but you can find it at most grocery stores as well.
