Blueberry Overnight Chia & Oats
Breakfast and I have a love/hate relationship. I’m a big weekend brunch fan; but during the week, I’m rarely interested in eating first thing in the morning. I’m also not the kind of person who can eat the same thing everyday. Luckily these overnight chia and oats are an easy and healthy breakfast to add to the rotation!
Ingredients
1/4 cup rolled oats
1/8 cup shredded coconut or flakes
2 tbsp chia seeds
1 tsp vanilla
1 cup almond milk
dash of cinnamon
1/2 cup frozen blueberries
1 tbsp honey
Combine oats, coconut, chia seeds, cinnamon and honey. Add in the almond milk and vanilla.
Stir in 1/4 cup of the frozen blueberries, or your favorite frozen fruit.
Pour into an airtight container. Store in the fridge for 6 hours or overnight.
How easy is that? I make it right before bed and it’s ready the next morning! Plus you can grab it on your way to work and eat it right out the tupperware.
To make it a little bit more interesting, I heat up the other 1/4 cup of frozen blueberries with a little honey. The warmth of the sweet berries makes the cold mixture a little bit more exciting – especially when you also add more coconut and some pepitas!
I know this isn’t french toast or pancakes… but thanks to the chia seeds alone, this breakfast has omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants and more! Take that, Monday.
