Brussels Sprouts Pasta with Chicken Sausage
Happy almost Friday! Part of me feels a little funny saying that because this weekend is going to be a slightly irrelevant for me… is anyone else’s to-do list screaming at them after taking multiple hours off yesterday to happy cry through the inauguration? Just me? ? WORTH IT, though! I don’t mind working in pajamas on Saturdays and Sundays – and watching the first woman become Vice President was something I was NOT willing to miss. What a DAY!
But besides that, let’s chat about this recipe! I actually made it for an Instagram collaboration back in November, but it’s so delicious that I thought it deserved it’s own blog post, too. A simple recipe that only requires a few ingredients and less than 30 minutes of your time? I know some people who might be into that!
Also, this might just be me, but I think brussels sprouts have lost a little bit of their luster recently. They aren’t quite as trendy as they used to be and while they can be super delicious when they’re roasted and crispy, that can get boring after a while! This recipe uses thin slices of brussels that soak up the bright lemon juice and almost melt into the pasta and chicken sausage. Andddddd now I’m hungry. Mmmmm.
Brussels Sprouts Pasta with Chicken Sausage
ingredients
1 tbsp olive oil
1 shallot, minced
2 cups thinly sliced Brussels sprouts
2 links pre cooked chicken sausage, thinly sliced
1/2 lb Barilla Collezione Orecchiette
1 tbsp salted butter
1/4 cup grated parmesan cheese
1/2 lemon, juiced
salt and pepper
red pepper flakes (optional)
Instructions
1. Start a pot of water and cook pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
2. Mince the shallot and thinly slice the Brussels sprouts.
3. Add olive oil to a pan over medium heat. Add shallot and Brussels sprouts. Season with salt and pepper. Stir to combine.
4. Cover the pan and cook for 2 minutes.
5. Uncover and cook for another 5 minutes.
6. Add the thinly sliced sausage and cook for another 5-8 minutes.
7. Turn the heat down to low and add the pasta, butter, lemon juice, pasta water, and parmesan cheese. If you would like a little spice, add a few sprinkles of red pepper flakes.
8. Stir to combine and taste test to see if it needs more salt and pepper.
9. Serve with extra parmesan cheese and enjoy!
