A slow Saturday morning in bed with lots of snuggles and coffee... I mean, is there anything better?! 🥰

Seriously though, if you’ve been curious about the Peloton app, I finally sat down and wrote a whole big post alllll about all of the different classes, how you can stream it, how much it costs, some of my favorite teachers, and more!

Even if we didn’t have a bike, I would still happily pay the monthly fee for access to their strength, yoga, pilates, barre, stretching, and even the outdoor running classes... only when it’s warm out though 😉🙈

This pretty salad uses pre-cooked beets (that you can find at most grocery stores!), nutty and filling farro, peppery arugula, creamy goat cheese, and a simple vinaigrette - and it’s so easy that you won’t even mind meal prepping it for lunches at the beginning of the week 🙌🏼

We’ve had an idea of what we wanted this wall to look like ever since we moved in here a little over 3 months ago - but it is so exciting to see it come to life!!

#LSLsupperclub No. 9: The One When Lauren Messed It Up 🤣

Welp, the first Sunday Supper of 2021 went off just like the rest of 2021 - not at all according to plan 🙈 I almost just gave up after burning the eggplant for the eggplant rollatini recipe I had scheduled for tonight (that recipe is in the blog!)... but I’m glad I kept going because now we have this new creamy chicken sausage pasta delight!

Here’s what I did:

1 onion, chopped
3 chicken sausages, raw with casings removed
1 jar of tomato sauce
1 cup of water
1/2 cup part skim ricotta
salt and pepper
red pepper flakes
about 3 handfuls of spinach
8 oz of pasta (I used @eatbanza!)
chopped basil
grated Parmesan cheese

1. Add olive oil to a pot and heat to medium high. Add chopped onion and chicken sausage (removed from casing). Break up the sausage as it cooks.
2. Once the onions are soft and the sausage is cooked through, add a jar of tomato sauce and 1 cup of water. (You could also probably just add a c 28oz can of crushed tomatoes instead of the sauce + water...)
3. Simmer over medium heat for a few minutes.
4. Stir in ricotta so it gets nice and creamy.
5. Season with salt, pepper, and red pepper flakes.
6. Add spinach and stir until wilted.
7. Add your drained pasta and stir to coat.
8. Finish with chopped basil and Parmesan cheese!
