Cauliflower with Raisins, Parsley, and Parmesan
Ingredients
1 head cauliflower
1 1/2 Tbsp extra-virgin olive oil
1 Tbsp balsamic vinegar (or white balsamic)
salt and pepper
2 Tbsp raisins (or golden raisins)
1/4 cup parmesan cheese (or romano cheese)
1 Tbsp chopped parsley
Preheat oven to 375 degrees.
Cut the cauliflower into small florets and add them to a large mixing bowl. Coat the florets with the olive oil, vinegar, salt, and pepper.
Transfer to a lined baking sheet and roast for 30-40 minutes. Check on the cauliflower as it cooks. About half way through I like to shake the pan and flip a few florets. They are done when they are caramelized and tender. Transfer to a large mixing bowl. Add the cheese and chopped parsley to the bowl.
On the stove, heat 1/2 tablespoon of olive oil over moderate heat. Add the raisins and cook until hot. Toss them as they plump- this should take about 1 minute. Add to the cauliflower. Mix everything together and serve.
