Cherry Baked Oatmeal Recipe
This cherry baked oatmeal recipe is delicious – and you probably have most of the ingredients already!
I discovered baked oatmeal some time last year and I’ve been in love ever since. I love that you can add so many different flavors and ingredients to it, and it’s not hard to make at all. No meal prep stress with this!
But the best part for me is having breakfast already made in the morning. I don’t always want to put effort into preparing something to eat right when I get up, but I also want something heartier and healthier than cereal. This totally fits the bill.
I’m pretty sure Maggie’s Pumpkin Apple Baked Oatmeal will always be my favorite – but I also love my own version with pears and walnuts, too. That’s actually what I was craving when I came up with this recipe, but I didn’t have any fresh fruit on hand. Since we’re all trying to utilize freezer staples more during quarantine, I thought I’d play around with using frozen cherries as the fruit component… and it worked! Since then, it’s been a quarantine staple for me! So good!
Cherry Baked Oatmeal Recipe
ingredients
2 cups oats
1 tsp cinnamon
1 tsp baking powder
pinch of salt
1.5 tsp almond extract
1.5 cups milk (dairy or non dairy!)
2 eggs, whisked
4 tbsp maple syrup (or honey!)
2 tbsp coconut oil, melted
2 cups frozen cherries

Preheat the oven to 375 degrees.

In a small mixing bowl, combine oats, cinnamon, baking powder, and salt. Set aside.

In a separate bowl, combine almond extract, milk, whisked eggs, maple syrup, and melted coconut oil.

Add the dry to the wet and stir to combine. Stir in frozen cherries as well.

Transfer the mixture to a baking dish. You can use a square dish (9×9 works!) or an oval dish like mine.

Bake for 45 minutes. Serve with your favorite nut butter on top!

Notes
If you'd like to use a different frozen fruit, just make sure it's a similar size to cherries. I tried this with frozen strawberries and they were too big. Some pieces had a lot of fruit and others had none at all - just something to keep in mind!

This was delicious!!! I will definitely make it again. Sweet but not sugary. I used grass fed butter instead on coconut oil. Delicious
