Cinco De Mayo Guacamole
Happy Cinco de Mayo! The perfect excuse to have some tacos and a margarita, am I right?! Well, I’ve got recipes for regular and strawberry margaritas, watermelon mojitos, tomatillo salsa, mango salsa, fish tacos and more… but no guacamole! This seemed like the appropriate day to right that wrong.
Ingredients
2 avocados
1 lime
1/4 tsp salt
1/4 tsp cumin
1/4 tsp chili powder
1/4 onion
2 roma tomatoes
1 tbsp cilantro
1/2 small jalapeño
1 clove garlic
—
Half and scoop the avocados. Juice the lime over the top.
Seed and dice the jalapeño and tomatoes, dice the onion, and mince the garlic clove. Set aside.
Season the avocado with cumin, chili powder, and salt.
Mash with a fork or potato masher.
Add the tomatoes, onion, garlic, and jalapeño.
Roughly chop about a tablespoon of cilantro and mix it in.
Transfer to a serving bowl!
You will be really popular if you bring this to parties this summer.
Enjoy!
