Hey guys, I told you blog posts would be light this week… but while I’m away, I thought it was fitting to show you a recipe that will put you right in summer vaca mode, no matter where you are 🙂
You could do this with any of your favorite cocktails, but I love these Watermelon Tequila Popsicles the best. The fruit and mint combo keeps them light and refreshing, which means you can start serving them at any point in the day, right?!
Watermelon Mint Tequila Popsicles
1/4 cup water
1/3 cup sugar
1/3 cup fresh mint, torn
4 cups watermelon, small cubes
juice of 1 lime
1/2 cup tequila
Combine water and sugar in a small saucepan. Tear up the mint and add that in, too. Bring that mixture to a boil, reduce to a simmer and cook until the sugar has completely dissolved. This shouldn’t take long because it isn’t a lot of liquid! Remove from the heat, strain the mint out and set aside.
Using a food processor, puree the watermelon and the lime juice until smooth. Strain the mixture and add to the bowl with the simple syrup. Stir in tequila.
Add the mixture to the popsicle molds leaving about 1/4 inch of space at the top. Put them in the freezer for an hour and then add the sticks. Let freeze for at least 15-24 hours.
French 75 Popsicles
2.5 cups champagne
3/4 cups gin
3/4 cup simple syrup
3/4 cup fresh lemon juice
Combine all of the ingredients and stir. That’s it! Then pour them into the popsicle molds leaving 1/4 inch of space at the top. Place in the freezer.
After three hours in the freezer, add the popsicle sticks and let freeze for another 15-26 hours, or until solid.
