Coconut Bacon
Coconut Bacon?! Am I crazy?! Well…
I saw this recipe on Beard and Bonnet and was immediately intrigued. How on earth could you make coconut flakes resemble bacon? Turns out, liquid smoke is magical, available in most grocery stores, and only costs about $2.
Here’s how you make it!
Ingredients
1 tbsp liquid smoke
1.5 tbsp tamari soy sauce
1 tbsp maple syrup
1/2 tbsp water
1.5 cups unsweetened coconut flakes (not shredded!)
black pepper

Preheat the oven to 325 degrees.
Combine liquid smoke, tamari, maple syrup, and water. Whisk together and pour over the coconut flakes. Stir until all of the liquid has been absorbed.
Grind some fresh black pepper over the top and mix that in, too.
Spread on a sheet pan in an even layer. These will cook for about 20 minutes, but you should take them out every 5-7 minutes to stir and flip the flakes.
After 20 minutes, take them out too cool. They should be pretty dark and crispy, and they will continue to crisp as they cool down.
Store them in an airtight container!

I bought mine at Plum Market on Wells, but I Whole Foods usually has them, too!
