Easy 4th of July Dessert: Homemade Ice Cream Pops
The 4th of July is less than ONE week away – and you know what goes really well with the 4th of July? ICE CREAM! Especially the oh-so festive red, white, and blue American Fireworks flavor by Hudsonville Ice Cream!
If you’re new around here, Hudsonville Ice Cream is our all time favorite ice cream brand. Not only are their flavors absolutely delicious, but I also love supporting a family owned business based right here in the Midwest. I mean, who knows more about ice cream than a family who has been perfecting their recipes since 1926?!
I usually describe their ice cream as nostalgic – but I’m not sure any of their flavors are quite as nostalgic as their Limited Edition American Fireworks flavor. It has a sweet and sour ice cream base with swirls of sour cherry and blue popping candy – yup, just like the kind you ate as a kid! I’m pretty sure my nephews would go nuts for this flavor as is, but I thought I’d make it even more fun by turning it into ice cream pops!
These really couldn’t be easier, too. All you need is a popsicle mold, white chocolate, coconut oil, and freeze dried strawberries. The white chocolate and coconut oil melts into a smooth constantly that hardens around the cold ice cream quickly – and the freeze dried strawberries turn into a pretty (and delicious!) powder when you crush them. It is SO GOOD.
Easy 4th of July Ice Cream Pops
Ingredients
1 carton Hudsonville American Fireworks Ice Cream (Get $2 off here!)
1/2 cup white chocolate chips (I used mini chips so they melt faster!)
2 tbsp coconut oil
1/2 cup freeze dried strawberries
Instructions
Step One
Let the ice cream sit out on the counter for a few minutes. Once it is soft, spoon the ice cream into the molds. Make sure that you fill it completely, with no gaps or holes. Insert the popsicle sticks, put the cover on top, and place in the freezer for at least 3 hours (or until completely set).
Step Two
Put the freeze dried strawberries in a sealable bag. Using the back of a spoon, crush the strawberries until it resembles a powder. The finer, the better!
Step Three
When the ice cream pops are frozen, add white chocolate chips and coconut oil to a glass. Place in the microwave for 30 seconds, then take it out and stir. Repeat one or two more times until both the oil and chocolate chips are melted, and it is a smooth consistency.
Step Four
Take the ice cream pop out of the mold and dip it into the glass with the white chocolate mixture. Immediately after, sprinkle the wet chocolate with the strawberry powder before it sets. (It sets quickly, so don’t delay this step!)
Step Five
Enjoy immediately!
