Healthy Apple Crisp
This healthy apple crisp has all the flavors you love without all of the sugar, butter, and flour!
I love apple crisp. I mean, who doesn’t really? It’s warm and cozy and comforting – and way easier to make than a pie. The only problem is that most recipes call for a LOT of sugar and butter. Not that those things shouldn’t be enjoyed – I just prefer to save the really indulgent desserts for the holidays and parties vs. at home on a weeknight.
But at the heart of it, an apple crisp doesn’t need to be bad for you. It should have apples, pumpkin spice-y spices, and a crumble topping. I can make those things healthier! So I followed a format very similar to my stone fruit crumble, and it worked! As you can see, the filling won’t be as syrupy as your Mom or Aunt probably makes it, but I promise it’s still SUPER satisfying. Even Adam loved it!

Obviously, apple crisp is always delicious with ice cream – but since this one only has 2 tbsp on maple syrup in it, you can also eat it in the morning, too! Just add some unsweetened greek yogurt, and you’ve got a perfectly Fall breakfast to start the day.
Ingredients
3/4 cup oats
1/4 cup almond flour
1 tsp cinnamon
2 tbsp maple syrup
1.5 tbsp butter (or Earth Balance for vegan), melted
4 granny smith apples
2 tbsp cornstarch
1/2 tbsp pumpkin pie spice
1 tsp lemon juice
step one
Preheat the oven to 350.

Peel and cut the apples into a bowl. Add the cornstarch, lemon juice and pumpkin pie spice, and mix until the apples are coated. Transfer the apples to an 8×8 baking dish.

In a separate bowl, add the oats, almond flour and cinnamon. Make a well in the center and pour in the maple syrup and melted butter. Stir together. (This mixture will not be dense – you’ll have some wet clumps and some dry mixture. That’s okay!)

Spread the crumble topping over the apples.

Bake at 350 degrees for 45-50 minutes, or until the fruit is bubbling and the topping is golden.
While you can use regular flour in this recipe, I prefer the almond flour for a few reasons. First of all, I like the taste! But I also love that it makes this crisp gluten free, so any of your friends that can’t have gluten can still enjoy it! And lastly, almond flour has nutritional benefits that regular flour doesn’t. It’s high in protein, manganese, and Vitamin E; and it’s low in carbs. Woo!
