Gooood morning, everyone! As most of you know, we are finally going on our honeymoon to Italy this month, where I will be eating all of the pasta and pizza and gelato that my heart desires. Therefore, I really want to prioritize eating lots of vegetables and healthy meals leading up to our trip. The only problem? TIME! I haven’t ever gone on vacation for this long, so I am already feeling a little stressed about tying up all of my loose ends for work before we leave so I can really check out and be present. There are never enough hours in the day when you’re a self-employed enneagram 3 😂

Healthy Freezer Staples from Daily Harvest
Mint + Cacao Smoothie
When it comes to their smoothie collection, the Mint + Cacao Smoothie is my forever favorite. It seriously tastes like mint chocolate chip ice cream to me, except it has good-for-you ingredients like spinach, cacao nibs, chlorella, bananas, and cashews. All you have to do is add your liquid of choice and blend it up. Truly couldn’t be easier.
Portobello + Pesto Flatbread
Okay so I have tried a few of their flatbreads and enjoyed them – but I just got the Portobello + Pesto one a few weeks ago and WOW IT IS SO GOOD. I don’t know what took me so long to try it, but it’s definitely going to be a part of all my future orders. It has a broccoli-based crust topped with a creamy cashew pesto, roasted artichokes and portobello mushrooms. Just preheat your oven with the baking sheet inside (this step is really key!) before baking the flatbread. So good.
Sweet Potato + Wild Rice Hash
This Sweet Potato + Wild Rice Hash from their Harvest Bowl collection gives me major breakfast burrito vibes – which is why I often like to add an egg on top! Don’t worry, if you’re 100% plant-based you can leave that off and everything else is vegan. This bowl has wild rice, sweet potatoes, mushrooms, and avocado – and it’s ready to eat in less than 5 minutes. You also have the option to make it in the microwave using the bowl so no dishes.
Banana + Cacao Bites
I love a good energy bite, and this new Banana + Cacao flavor is so satisfying! They are made with plant based ingredients like bananas, cashew butter, oats, and unsweetened dark chocolate. If bananas aren’t your thing, they have so many other great flavors in their Bites collection. I’ve also tried and loved the Hazelnut + Chocolate Bites (reminds me of Nutella!), Raspberry + Fig Bites (very raspberry forward!), and Coconut + Lemon Bites (so fresh and lovely!). Such a great little on-the-go snack to have on hand when you’re busy and/or need something to satisfy a sweet craving!
Strawberry + Goji Berry Oat Bowl
When it comes to Daily Harvest’s Forager Bowl collection, the Apple + Cinnamon Oat Bowl has always been my #1 – but I recently tried this Strawberry + Goji Berry bowl and it’s definitely climbing the ranks. I think the best part is that you can prepare them hot or cold depending on your preference. If you’re an overnight oats person, just add 1/2 cup of milk, stir, and let it sit in the fridge overnight. If you prefer it hot (like me!), add 1/2 cup of milk and cook on the stove or in the microwave. I love to add some fresh berries and a sprinkle of hemp hearts on top!
