Pesto Hummus
A few weeks ago, I needed to bring a quick and portable appetizer to a party but I wanted to avoid the typical guacamole or spinach dip. I happened to have basil in my apartment and whenever I have extra, I almost always make a batch of pesto… so I thought, why not put two of my favorite things together: pesto + hummus?
Ingredients
1/2 cup fresh basil
2 cloves garlic
3 tbsp parmesan cheese
1/2 lemon
2 tbsp olive oil +
1 (28 oz) can of chickpeas
salt + pepper
1 tbsp tahini

Combine the basil, garlic, parm, lemon and olive oil in your food processor.
Pulse until it looks like this.
Add the chick peas and tahini. Add a little bit more olive oil as you pulse this until you get your desired consistency. Season with salt and pepper.
Sprinkle extra parmesan cheese on top and serve with cucumbers and pita or tortilla chips!
If it’s dry when you get to your party, just drizzle some extra olive oil over the top.
Dip away!

Those are two of my favorite things too and I've never thought to combine them! Yum! I'll have to try this soon.

Love this! Those are two things we pretty much always have in the house, but I have never combined them! Great idea!
