How To Cook Pizza On The Grill
We finally figured out how to cook pizza on the grill – and now we want to do it all the time!
Oh, pizza. One of my favorite things in the whole wide world. Adam and I joke that we are the masters of making up excuses to eat pizza. Everything from “I had a bad day, we should eat pizza.” to “It’s beautiful outside, we should eat pizza!” (Don’t worry, we don’t eat every night ?)
Honestly though, there’s a reason why it’s so well loved – and I think it’s because it can be heavy and greasy, or it can be light and full of veggies! You can have a dense crust or cauliflower crust! You can bake it or grill it! The possibilities are endless! Our favorite way to eat pizza is on the patio at Spacca Napoli, but now that we have an awesome Weber Grill Spirit II and a pup to hang out with at home, we figured it was time to try it ourselves.
My family has been grilling pizzas forever, so I knew that would work… I just hadn’t done it myself yet. Most people assume that baking pizza is the only option, but I like grilling it SO much better. If you’re a fan of wood fired pizza, grilling chars the dough in a similar way – plus I think the grill marks are so pretty!
And speaking of grill marks, our Weber Grill Spirit II made this whole process SO easy. It’s incredibly well made and pretty foolproof to operate, plus the grates hold their heat really well so you get a nice sear on the crust and vegetables. How To Cook Pizza On The Grill
Step One
Make or buy the dough.
I was thinking about making our own dough, but then I remembered that most pizza places will sell you their dough… and did I really think mine would be better than the dough at Spacca Napoli?! No way! So, I called and asked if they would sell me some, and that’s all it took. If you’re pressed for time, this is the BEST shortcut!
Step Two
Slice a red onion, quarter a pepper, and clean some mushrooms. Spray with avocado oil spray and season with salt and pepper.
Step Three
Preheat your gas grill to high heat.
Step Four
Add onion, pepper and mushrooms to the grill. Cover and cook for about 6 minutes, and then flip. Cook for another 5 minutes, or until the vegetables are cooked to your liking. Remove from the grill.
Step Five
Shape the dough into a circular shape on a clean and lightly floured surface. Brush olive oil on one side and place the dough on a rimless baking sheet, pizza stone or pizza peel.
Step Six
Transfer the dough directly onto the grill – the oiled side down. It’s okay if your circle turns into some other weird shape in the process… it’s rustic!
Step Seven
Cover and cook for 2-3 minutes. Using a pair of tons, flip the dough and cook for another 2 minutes.
Step Eight
Remove the dough from the grill. Top with tomato sauce, thin slices of prosciutto, fresh mozzarella, and those veggies you grilled!
Step Nine
Transfer the pizza back to the grill. Cover and cook for 4 minutes, or until the cheese is melted.
Step Ten
Sprinkle with fresh basil and enjoy!

Grilled Veggie and Prosciutto Grilled Pizza
To ease into grilling pizzas at home, we decided to make pizzas with some of our favorite toppings! We are HUGE fans of peppers and onions cooked any way, so those were easy toppings to start with – plus mushrooms! (We love pizza with mushrooms on top.) To round it out, we added a little prosciutto, aka the only meat I really love on my pizza. The perfect salty touch!

Grilled Vegetable Grilled Pizza
Ingredients
- 2 balls of pizza dough (homemade or purchased from your favorite pizzeria!)

- 1 jar of pizza sauce (Mutti makes my favorite one!)
- 8 thin slices of prosciutto
- 1 ball of fresh mozzarella cheese
- 1/2 tbsp olive oil
- fresh basil
