Instant Pot Buffalo Chicken Sliders

The countdown to the Super Bowl is ON! I always feel funny buying into Super Bowl excitement because I don’t like football… but alas, who doesn’t like an excuse to eat chili and buffalo flavored deliciousness? YAY SPORTS!
(Side note: I’ve tried to like football – but it’s just not for me. I think that’s valid considering I really enjoy cheering on the Cubs at Wrigley Field, we watch soccer most weekend mornings, and I’ve always been a Blackhawks fan. I’m allowed to dislike one sport, right?!)
Anyway, let’s talk about something we can all agree on – buffalo chicken! I’ve been using my Instant Pot a lot more, and after making an easy salsa chicken, I thought… I bet you could do this with buffalo sauce, too. Turns out, I was right! Not only does it cook quickly, but it also helps you avoid standing over the stove or fighting for space in the oven on game day. Such a win.
Instant Pot Buffalo Chicken
Ingredients
3 lbs chicken
2.5 cups Frank’s Hot Sauce (depending on how spicy you want it!)
1/3 cup ghee
1/4 cup blue cheese
3/4 cup celery, chopped
1/4 cup green onion, chopped
Instructions
- Add the chicken, hot sauce and ghee to your Instant Pot.
- Lock the lid, shift the valve to “seal” and cook on high pressure for 10 minutes. (Different models can work differently, so make sure you read the instructions on the best way to do this on your machine!)
- When it’s done cooking, quick release the pressure. (Be careful of the steam – it’s hot!)
- Remove the chicken from the Instant Pot and shred with forks.
- Set the pot to sauté mode and add the blue cheese, chopped celery, and chopped green onion to the pot. Stir for a minute or two, so the blue cheese can soften a bit.
- Add the chicken back in and stir to combine.
How To Serve Buffalo Chicken Sliders At A Party
Want to turn the your Instant Pot Buffalo Chicken into sliders? All you need is buns, some additional green onions, and some additional blue cheese… that’s it! If you’re hosting a party, or bringing these to someone else’s party, I’d recommend keeping each component separate and allowing each guest to make their own slider. That way they won’t get soggy, and each person can make it the way they like it.
Most Instant Pots have a “warm” setting that you can utilize for situations like this. Keep a pair of tongs nearby, along with bowls of blue cheese and chopped green onion. Tell guests to make them throughout the game as they please!
