Lemony Salmon and Avocado Salsa Tacos!

Remember the Homemade Whole Wheat Tortillas? Well, we filled those with… Lemony Salmon and Avocado Salsa! We usually make fish tacos with tilapia, but we were at the grocery store and we thought, why don’t we try something different?! The key to making this meaty fish work in this dish is the lemon and the bright and flavorful salsa. And those tortillas… YUM!
Check out how you make it!
Ingredients
1 avocado
1 container of cherry tomatoes
a handful of cilantro
1/2 red onion
1 lime
olive oil
salt + pepper
2 salmon steaks
1 lemon

Cut the avocado into small bite sized pieces. Cut the tomatoes in half. Dice the onion. Roughly chop the cilantro. Phew.
Now put it all together and toss with olive oil, the juice of 1 lime, and salt + pepper.
Store in the fridge until the salmon is ready.
Take out the salmon and lightly salt and pepper them.
Place on a hot pan with olive oil, skin down, and cover. Cook for 5 minutes and then flip it, so you can easily peel the skin off.
Add 2 lemon slices and steam for another 5 minutes or so.
Uncover and continue cooking until cooked to your liking. Cut it up in the pan with the spatula while it finishes cooking.
It’s ready for tacos!
Get out your tortillas and salsa.
Assembly line ready!
