night 1 – stuffed peppers

If you’re a Trader Joe’s fan, we love adding some of the leftover chicken to TJ’s Southwest Salad mix! Otherwise, just throw together some romaine, cucumbers, red onion, avocado, and anything else you like in salads.
night 5 – vegan sheet pan fajitas
These are on my list for this week!

I made this a few nights ago and it’s AMAZING!

I made something similar to my vegan quinoa salad last week and it was delicious and satisfying. Add some arugula for extra greens!
