How is it the weekend already? Does anyone else feel like this week FLEW by?! I think it’s because I’ve felt really hopeful again… and it feels GOOD. Between certain speeches on TV and a virtual conference I attended on Thursday, I’m really energized and excited for these next few months. I also saw this quote on Instagram and I’m trying to use it as my new mantra instead of getting down on 2020 so much. Who’s with me?!

I’ve been making an egg and kale scramble recently and it’s so good! Just crisp up the kale, add your eggs, season it up, and you’ve got an awesome breakfast!
You’ll definitely have some additional leftovers from these recipes this week, so I’d repurpose those for lunch! Especially the meatballs… anyone else love pairing them with a big salad?!
