What a week, guys. I know content has been a little light this week, but after getting some heartbreaking news about 2 of Adam’s family members on Monday, it’s just been more important for me to be there for him, instead of worrying about sticking to my editorial calendar. I know you guys understand – there’s a lot going on in the world. We all have to give each other some grace.
But since this is a weekly series, I wanted to make sure I got this up! Before diving into the next round of recipe recommendations however, I did want to reiterate that I have some new meal planning downloads for you! Because I know a lot of you who enjoy these posts can’t necessarily commit to every recipe I suggest, I created a Meal Plan Template for you to fill in yourself. I also created a categorized Grocery List Template so you can stay organized when you head to the store, along with a Meal Builder (and examples!) to help you come up with dinners based on what you have on hand!

night 1 – Grilled Pizza
Since it’s supposed to be GORGEOUS tonight and tomorrow, why not celebrate with a grilled pizza?! It’s a really fun excuse to spend the evening outside… but don’t worry if you don’t have a grill! You can still bake pizza at home, too. We actually did that on Thursday!
night 2 – Asian Inspired Ground Turkey Bowls
Want something easy, healthy, and delicious that’s a little different than a normal stir fry? These ground turkey bowls have been a hit in my kitchen for all of those reasons!
night 3 – Zucchini Chicken Enchiladas
These zucchini chicken enchiladas take a little bit of effort to cut and roll, but they make a bunch of leftovers, which means that you don’t have to cook lunch/dinner from scratch as much! Plus, they’re a super delicious way to get more vegetables into your dinner!
night 4 – Asian Inspired Ground Turkey Bowls Leftovers
You should be able to get 4 servings out of this recipe, but if you were super hungry the first night you made it, grab some edamame or potstickers from your freezer to go with it!
night 5 – Zucchini Chicken Enchiladas leftovers
You can either heat these up in the oven or microwave – either one works!
night 6 – Caramelized Shallot Pasta
I’m actually shocked that I haven’t tried this famous Allison Roman recipe yet – it’s been ALL OVER Instagram! I think it’s going to happen this week… have any of you made it yet?
night 7 – support a local restaurant!
While we try to cook often, we’ve realized that ordering in or picking up dinner one night a week is a nice break. And it’s a great way to support our favorite local restaurants!

breakfast ideas
My super easy Cherry Baked Oatmeal recipe went live this week and I can’t recommend it enough! You probably even have all of the ingredients on hand. It’s the perfect quarantine breakfast recipe to last you all week long.
lunch ideas
I’ve been just eating leftovers or making a simple salad for lunch, but I think I’m going to make my vegan quinoa salad this week. It’s been a while and it’s so good!
