Happy weekend, friends! It’s crazy how much can change in a week – I was in such a bad mood when I wrote last week’s meal plan post, but I feel SO much better this week. And honestly, that’s in large part because of you guys. The conversations I’ve had after this post about comparative suffering went live have refueled me again. It was so comforting to chat with so many of you who are also struggling with fear and grief – not because that’s all we should be focusing on, but just because it’s nice to know none of us are in this alone. Night 1 – Sheet Pan Gnocchi With Asparagus, Leeks, and Peas
My friend Kaitlin made this recipe this week with cauliflower gnocchi and texted our group chat immediately. Her exact words were that it’s “more tasty than a sheet pan meal has any right to be.” Seriously cannot WAIT to make it!
Night 2 – Chicken Enchilada Casserole
This hearty casserole has everything you love about enchiladas, in a way easier format. It also makes enough for multiple nights of leftovers, so it’s perfect for the weeks when you’re sick of cooking.
Night 3 – Shrimp Fattoush Salad
Crazily enough, Adam and I have been craving salad more than usual recently. I know – it’s a weird thing to crave in quarantine, but at least it’s healthy! We made my Portillo’s Salad last week and I think I’m going to make this fattoush salad with shrimp this week. It’s super fresh and simple, and great for lunch or dinner.
Night 4 – Chicken Enchilada Casserole leftovers
Heat it up in the oven or the microwave – either works!
Night 5 – Kung Pao Cauliflower
I have been majorly craving asian flavors, and this Kung Pao Cauliflower looks AMAZING! I think I’m just going to add red pepper flakes instead of trying to track down chiles de arbol – don’t be afraid to make substitutions that work for you, especially right now!
Night 6 – Salt Block Salmon
If you don’t have a salt block, I highly recommend getting one this summer. It makes the most flavorful salmon ever… and since it’s supposed to warm up later next week, we’re excited to make this meal again!
Night 7 – Chicken Enchilada Casserole leftovers
I told you it made a lot of leftovers! Less cooking = less dishes, right? 😉

If I don’t have leftovers, I’ve been really into Right Rice recently. Mix some into greens or cook up a veggie burger, add some hummus, and you’ve got an easy and filling lunch.
