LSL Weekly Meal Plan #9
Happy weekend, everyone! I feel like this was an emotional week for most people (how could it not be?!), so I hope you find some time to relax and indulge in a little self care this weekend. Whether that’s getting some extra sleep, curling up with a good book, doing a yoga class, or even making some homemade asiago bagels 😉
As for the meal plan, I honestly can’t believe we’re already on our 9th week of these. At some times, it feels like we’ve been on a stay-at-home order forever, and in other moments, 9+ weeks seems so crazy! I will say though – I’ve really enjoyed making these because it also forces me to plan out our week of meals, too. It’s definitely something I want to keep doing even after this is over.

night 1 – Asian Quinoa Salad
I haven’t made this quinoa salad in a minute, but I think I’m going to make it again this week, too! In the recipe card, it says it makes 4-6 servings, but I personally find it’s almost always 6 servings for us. That means you can have it for dinner 2 nights AND for lunch during the week. So worth the effort!
night 2 – Street Corn Pasta Salad with Cilantro Pesto + Goat Cheese
If you’ve never made one of Monique’s recipes, you are MISSING OUT. I mean, just look at that photo! Have you ever seen a more beautiful pasta salad?! I have 2 other pasta recipes to shoot this week, but this is on deck for next week for sure. Yum yum yum!
night 3 – Asian Quinoa Salad Leftovers
I usually eat these leftovers cold or room temperature, but you could heat it up if you prefer it warm!
night 4 – Yogurt Marinated Chicken + Tzatziki Sauce
I don’t know about you, but we love grilling on a nice night. This yogurt marinated chicken recipe also includes an easy tzatziki sauce and greek salad that’s delicious in a pita or piece of naan. You can also skip the carbs and just build an epic bowl, too.
night 5 – Street Corn Pasta Salad with Cilantro Pesto leftovers
I think I’d probably heat these leftovers up… but I bet you could eat it cold or at room temperature, too!
night 6 – Yogurt Marinated Chicken + Tzatziki Sauce leftovers
As long as you store the chicken, the tzatziki sauce, greek salad, and naan separately – this recipe makes great leftovers!
night 7 – Sun Dried Tomato Goat Cheese Quiche
We’ve been eating a lot of eggs the past few months, but I still haven’t made a quiche yet! I love the idea of adding something like this recipe to the weekly rotation, because you can have it for dinner one night and then breakfasts or lunches after that!

In addition to my baked oatmeal or chia pudding, we’ve also been loving greek yogurt bagels! Pop them in the toaster and you’ve got a breakfast that feels super indulgent.
lunch ideas
Honestly, this particular meal plan will give you a lot of extra leftovers to eat for lunch. Plan on the quinoa salad one day or two, the quiche another day or two, and then maybe a simple salad the other days!
