Mango Margaritas with Tommy Bahama #SummerOfGo
If you’re a fan of Lake Shore Lady on Facebook, you might have wondered why I asked what alcohol you like best in your summer cocktails. This post is why! Since the majority of you enthusiastically suggested tequila, I’ve teamed up with Tommy Bahama to show you how to make a Mango Margarita!
Tommy Bahama makes this Mango Margarita with a habanero kick. I decided that I didn’t want to go quite as spicy, so I incorporated a ginger simple syrup into the recipe. But if you and your friends like some heat, go for the habenero!
Adapted from Tommy Bahama’s recipe for Mango Habanero Margaritas

Ingredients
tequila
mango puree
2 champagne mangoes
1/4 cup water
3/4 cup frozen mango chunks
scratch sour mix
1 egg white
1/2 cup water
1/2 cup sugar
2 tbsp orange juice
1/4 cup fresh lime juice
1/2 cup fresh lemon juice
simple syrup
1/2 – 1 cup peeled and roughly chopped ginger
1 cup sugar
1 cup water
I started by making the simple syrup. Start just like you would any other simple syrup – heat sugar and water until the sugar has dissolved. Remove from the heat and add peeled/roughly chopped ginger. Steep for about an hour before straining and storing in the fridge. (You can store this in the fridge for a couple of weeks!)
Next I made the scratch sour mix. Tommy Bahama’s recipe makes a 1/2 gallon of this stuff, so I cut it back and played with the measurements slightly to make less of it. Don’t leave it out though! Ohmygod it’s so delicious. I’ve never made a sour mix before, and this recipe blew me away. So good!
Start by whisking one egg white until it’s nice and frothy. Whisk in the sugar.
Then add the water and orange, lemon, and lime juices. Store in the fridge for up to 3 days.
The last piece of the puzzle is the mango puree. You can buy The Perfect Puree if you want to skip this step! If not, cut and peel the mangoes. Side note: have you seen the easiest way to peel a mango? It works like a charm.
Combine the fresh and frozen mangoes with water, and blend until smooth. That’s it!
Okay, now for the fun part!
In a cocktail shaker, combine:
2 parts tequila
2 parts mango puree
1 part sour mix
1/2 part simple syrup
1 ice cube
Shake until combined. Strain into a glass.
And there you have it.
Grab your girlfriends, give them an extra ice cube or two and enjoy a nice summer night.

I garnished with a lime, but you could definitely rim the glass with salt if you’re feeling extra festive!
I must admit, these are definitely strong. Even though it doesn’t taste like it, I put 2 shots of tequila in each glass. After one drink and lots of gossip, I was definitely feeling it. Please drink responsibly!
