Mint Chocolate Coconut Truffles
Can you believe there’s only ONE week left before Christmas Eve? I feel like I haven’t enjoyed the holiday season enough this year, so I’m looking forward to seeing a show with one of my best friends tomorrow night, hopefully getting to the Christkindlmarket in Wrigley this weekend, and maybe even making a trip down to Zoo Lights if it’s not too cold. Mint Chocolate Coconut Truffles
Let’s talk about this recipe, shall we?! I decided to make these for an Instagram collaboration with Fresh Thyme (an awesome grocery store here in Chicago!) – but as soon as I got the recipe down, I realized it should also live here on the blog, too.
There are a LOT of recipes with peppermint and chocolate this time of year. So many that I almost abandoned this idea entirely. But then I was talking about how much I love coconut in sweets and realized I’ve never had a mint chocolate COCONUT dessert! Turns out it’s an amazing combo and such a great option if you are looking for a low sugar no-bake dessert. Scroll down for the recipe!
Ingredients
2.5 cups unsweetened shredded coconut
1/4 cup cacao powder
1/4 cup coconut oil, melted
1 tsp peppermint extract
1/4 cup maple syrup
1/4 cup walnuts
1 cup dark chocolate chips, melted
crushed candy canes (for garnish)
Instructions
1. Add coconut, cacao powder, coconut oil, peppermint extract, maple syrup, and walnuts to a food processor. Pulse until all of the ingredients are chopped and mixed.
2. Form the mixture into 16 balls. Instead of rolling them between your hands like a cookie dough, you want to press the mixture together to form the ball shape.
3. Let them set in the freezer for at least 20 minutes.
4. Over a double boiler, melt the dark chocolate chips. Take your truffles out of the freezer and dip each one in the chocolate. Top immediately with crushed candy canes.
5. Store in the refrigerator!
