Healthy Pancakes
It was National Pancake Day on Tuesday. Even though pancakes aren’t something I eat often, the silly holiday made me crave them. Luckily, my friend Danielle has a recipe made with ingredients that I always have on hand. Lifesaver!
This recipe makes about 2 servings. I decided to make small pancakes instead of big ones, so I ended up with 18 little guys. Here’s how you make them!
Ingredients
2 bananas
2 eggs
2 tbsp peanut butter
1/2 tsp cinnamon
earth balance
agave or maple syrup

Add the bananas, eggs, peanut butter, and cinnamon to a food processor.
Pulse until smooth.
Melt earth balance (or regular butter) on a pan. Add small spoonfuls of batter to the hot pan. Cook for 1-2 minutes.
Check with the spatula and flip.
Once they are all cooked, top with agave or maple syrup.
Dust with more cinnamon and serve!
Dig in!

I've never taken a dip into the paleo pool, but these look amazing! I'm such a sucker for pancakes and these look just incredible! Thanks for sharing 🙂

Elle, I'm the same way- I don't have much of an interest in committing to a paleo diet, but there is no denying that these are easy, healthy, and so so good!!! Let me know how they are if you try them!! xoxo

I tried the banana + egg pancake once and it didn't turn out. But I didn't use peanut butter (is that technically paleo?) or the food processor so maybe I'll give them another shot with that method!

Erin- the peanut butter really helps it hold it's shape and zapping it in the food processor ensures that there aren't any chunks, so hopefully you will have better luck this time! As for being authentically paleo… I might be off on that. I don't follow the diet and I was under the impression that these ingredients were ok. I could be mistaken! I'll do a little research.
