Pecan Pie Bread Pudding [Video]
Yesterday I made a really healthy recipe, but today I’m on the very opposite end of the spectrum. In my latest cooking video, I’m making Pecan Pie Bread Pudding:
Ingredients
1 loaf day old french bread
2.5 cups milk
1 cup half & half
4 large eggs
1 cup granulated sugar
1 tbsp vanilla extract
pinch of salt
1/2 tsp cinnamon
1/4 cup packed brown sugar
1 cup pecans, chopped
Preheat oven to 350F.
Cube bread and lightly toast in the oven for approximately 7 minutes. Let them cool and then add to a large mixing bowl.
In another bowl, whisk together the eggs, milk, half & half, sugars, salt, cinnamon and vanilla. Add pecans and mix thoroughly. Pour the mixture over the toasted bread and let it soak for at least 10 minutes.
Pour the mixture into a greased 8×8 baking dish and sprinkle with some more chopped pecans. Place pan on a cookie sheet so any boil over is caught. Bake for 45-55 minutes or until center is slightly wiggly.
Let cool for at least 10 minutes before serving.
