Pesto Salmon and Zoodles
Last week, I realized that I haven’t shared a typical weeknight meal in a while… so as we head into another work week, I thought it would be fun to show you an easy and healthy meal that you can whip up even after a long day of hustlin.
Salmon and zoodles are two of my favorite easy dinners, so it was only a matter of time until I combined them! I usually go for lemons/herbs or asian flavors on salmon, but why not slather some pesto on there? Well, I’m here to report that if you do, you’ll get a super flavorful dinner, so… WOO!
Here’s how you make it!
Ingredients
(serves 1)
1 salmon filet
1 zucchini
1/2 cup pesto
large handful of cherry/grape tomatoes
Preheat oven to 400 degrees. Place the salmon on a piece of tin foil with a few cherry tomatoes. Spread a few tablespoons of pesto over the top of the salmon. Seal the tin foil into a packet around the salmon and tomatoes. Bake for 20 minutes, or until the salmon flakes easily.
While that is cooking, spiralize your zucchini and lightly cook them in a pan over medium heat, along with some more cherry tomatoes. After about 3 minutes, add a spoonful of pesto at a time until the zoodles are lightly coated. Cook for another minute or two and then add them to a bowl.
I could just eat this. So summery and delicious!
Unwrap your foil packet and place the salmon and tomatoes on top of the zoodles.
Healthy, delicious and satisfying. And EASY! Oh yeaaaaa.
