Prosciutto and Arugula Pizza [Video]
As you know, I’ve been filming videos with Learn to Cook for a while now… but this one is extra special because it’s entirely MY recipe! I’ve been making Prosciutto and Arugula Pizzas for years, so this was extra fun to make and I hope you love it! Enjoy!
Ingredients
pizza dough
1 packet active dry yeast
1 cup warm water
1 tsp honey
3 tbsp extra virgin olive oil
3 cups flour
1 tsp salt
toppings
1 cup fontina cheese, shredded
1 cup mozzarella, shredded
1 lemon
2 tbsp chopped shallot
2 tbsp olive oil
6 thin slices of prosciutto
salt and pepper
parmesan cheese shavings
2 cups arugula
I’ll start by saying that you could skip this step and go buy pizza dough. I do that all the time, so no one is judging you! I personally like asking the pizza counter at my grocery store if they have any freshly made – it tastes so much better than a frozen dough and you don’t have to wait for it to defrost.
If you decide to make your own dough, combine water and yeast in a stand mixer. Stir with a spoon to combine and let the mixture sit for about 5 minutes. Add the honey and olive oil and stir. Add salt and 1.5 cups of flour before turning your mixer on low. Continue adding flour until the dough is smooth and a little sticky. Once the dough is done, flour your hands (to avoid what happened to me in the video!). Oil a large mixing bowl and add the dough, turning it in the bowl so it gets coated in the oil. Cover with a towel and let it set in a warm place for about 1.5 hours, or until it’s doubled in size.
Preheat your oven to 450 degrees. Place the dough on a floured surface and roll out to a large round. coat with a thin layer of olive oil. Sprinkle chopped shallots, fontina cheese and mozzarella cheese on top. (Tip: You can sprinkle the cheese closer to the edges than you think!) Top the cheese with the thin slices of prosciutto.
Bake in the oven for 15-20 minutes. While that’s cooking, combine arugula and the juice of one lemon. Add about 1 tsbp of olive oil + salt and pepper. Taste to make sure the lemon/oil ratio is good.
Take the pizza out of the oven and top with the arugula. Add a few pieces of shaved parmesan cheese.
