Pumpkin Bread
Who doesn’t love Pumpkin Bread?!
This recipe makes 2 loaves or 1 loaf and 2 minis. Here’s how you make it!
Ingredients
3 cups sugar
1 cup vegetable oil
4 eggs
3 cups sifted white whole wheat flour
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
1 tbsp baking powder
2/3 cup water
16 oz can of pumpkin
1 1/2 cups raisins
Preheat the oven to 350 degrees.
Mix the sugar and oil.
Once that is combined, add the eggs one at a time.
Sift the flour.
Then, sift the salt, spices, soda, and powder. With the mixer turned on, add the flour mixture and water alternately 2 to 1. Add a little bit of flour…
…and then a little bit of water.
Once all of that is combined, add the pumpkin.
Mix until smooth. Stop the mixer and clean the sides of the bowl.
Add the raisins and mix them all in.
Now you are ready to start baking!
Grease the pans you are going to use. Again, this makes 2 loaves or 1 loaf and 2 minis. Fill them up!
Bake at 350 degrees until the middle of each loaf is cooked.
Test with a toothpick.
The mini loaves will take about 45 minutes. The big loaf will take a little bit longer; about an hour.
Let it cool a little bit before digging in.
It’s so good when it’s warm, though… so don’t let it cool for too long!
