Quinoa Veggie Burgers
I pin a lot of recipes for veggie burgers, but I honestly never make them. So this week, I finally made a mess of my kitchen and did some experimenting of my own.
(makes about 6 burgers)
1 3/4 cups cooked quinoa
1/2 cup corn
3/4 cup black beans
1 tbsp green onion
2 large garlic cloves
1 tbsp diced red pepper
2 tbsp cilantro
1 1/2 tbsp romano cheese
1/2 cup panko breadcrumbs
2 tbsp flour
salt + pepper
2 tsp hot sauce
1/2 tsp chili powder
1/2 tsp cumin
whole wheat buns
hot sauce/ketchup/other toppings
Start with half a cup of the black beans and mash them with a spoon.
Add the corn, cilantro, green onion, garlic, and red pepper.
Add quinoa, chili powder, cumin, flour, cheese, panko and the rest of the black beans. Season with salt and pepper.
Crack the eggs in a separate bowl and whisk in the hot sauce.
Pour it into the quinoa mixture.
Let the bowl chill in the fridge for about 15 minutes. Then, take a scoop out with your hands and press them into patties.
I had to rinse my hands in between patties to get the best results. Once formed, put them back in the fridge for at least 20 minutes.
Heat oil in a pan and don’t add the burger until it’s hot. Let the first side cook for about 5 minutes, or until golden brown. This will help keep the burger together. Flip it and cook until the other side is golden brown. Place cheese on top and cover the pan until it starts to melt.
Place it on a whole wheat bun.
I ate my burger with sliced avocado.
And a little hot sauce!

Those look really good! I've struggled with cooking quinoa (don't laugh I know it's easy haha) but I want to try this recipe. Anything with avocado piled on top is something I can get behind 🙂

I love quinoa, but I've gotten into such a rut as far as recipes go, so I CANNOT wait to give these a shot!! Looks so delicious!
