Roasted BBQ Chickpeas
Have you guys ever tried roasted chickpeas? I know, it seems weird – but they’re actually a really awesome little protein-filled snack! And they’re even better with BBQ sauce all over them…
Ingredients
2 cups chickpeas
3-4 tbsp BBQ sauce
Preheat the oven to 375 degrees. Toss the chickpeas in the BBQ sauce until all are coated. Spread on a foil-lined sheet pan and bake for about 45 minutes. Warning: do NOT set it and forget it! Check in on them every 10-15 minutes to shake them up to keep them from burning. You also should trust your judgement – ovens tend to be different, so it might need more/less time. Once they are crisp (but not burnt) take them out and let them cool for about 10 minutes so they can crisp up even more.
Serve with a little bit more BBQ sauce on top because… why not?!
I got this sauce from an event at Blackwood BBQ and it’s pretty stellar. Plus, everyone expected me to pair it with chicken wings or something, right?! Who woulda thought chickpeas?! (This girl!)
So crispy, crunchy and addicting. Enjoy!
