Roasted Figs over Ice Cream
Remember those roasted figs I made last week? I love them on this salad (especially with the brie), but you can also eat them for dessert. Yes, that’s right.
I spooned them, while they were still warm, over almond milk ice cream. You can obviously use your favorite ice cream – I just love eliminating guilt with less fat and sugar, more fiber, and no saturated or trans fats. I also kind of like the subtle nutty flavor with the figs.
The warm syrup is the best part. Make sure you get a lot of it from the pan!
I shot this post in the morning, when it probably wasn’t a good idea to eat this whole bowl of ice cream, so I packed it back into the pint with the figs. I was crossing my fingers in hopes that it would be ok, and it was wayyy better than ok! Hello fig ice cream!
