Roasted Figs
Sometimes I see fresh figs at the grocery store and I literally can’t leave without them. The problem is that they go bad really fast. If you aren’t going to eat the whole container within a few days, then it’s not worth it. So of course, I bought these and then realized there was no way I was going to finish them before they went bad. So… what to do? Roast ’em.
Ingredients
8-10 fresh figs
1 tbsp butter (I use Earth Balance)
3 tbsp honey
1-2 tsp sherry
dash of cinnamon

Preheat your oven to 400 degrees.
Start by melting the earth balance or butter. Whisk in the honey, sherry and cinnamon. I personally love sherry, so if you’re like me, feel free to over-fill those teaspoons. Wash and cut the figs into quarters. Pour the mixture over the top.
Stir to coat and put in the oven for about 15 minutes.
When they come out, sprinkle a little bit more cinnamon and a little bit more honey. If you’re into those kinds of things…
