Rustle + Roux
Yesterday, I got to check out the new multi-concept cafe, Rustle + Roux. Located on the 2nd floor of the Franklin building right in the loop, you can grab food at a sandwich station, Ily cafe bar, salad bar, taqueria, or Fabio Viviani’s latest venture, Mercato.
Fabio was there to meet, greet and sign books- but most of the time, he was behind the counter making fresh pasta and pizzas for all of the customers.
The best part? He put extra prosciutto on my pizza. When I thanked him he told me, “You can never have too much prosciutto.” Amen, Fabio. Amen.
So, you’re probably wondering… how’s the food?!
I got the pizza with 400 Day Aged Prosciutto, Grilled Pears, Fresh Buffalo Mozzarella, and Shaved Parmigiano.
And lots of arugula. Yum yum yum.
I also picked up (a signed copy of) Fabio’s Italian Kitchen, which I’m already loving. The recipes are beautiful and remind me of my own family favorites. But best of all, his quotes crack me up!! For example, “If you cannot make circles with your hand and a wooden spoon, you don’t deserve to eat risotto.” Such a sassy way to tell people that risotto is easy. Kills me.
Also, “Gelato is not ice cream. It’s what ice cream can only hope to be when it dies and goes to heaven.” So true. I can’t wait to make my way through the rest of this gem. Pick up a copy for yourself here.
