Salmon with Roasted Tomatoes + My Greenpan Cookware Review
Calling all salmon lovers! I finally figured out the EASIEST and most delicious way to cook salmon – and it’s all thanks to my Greenpan Cookware!
To back up, you all know that I love quality cookware. I’m in the kitchen a lot, so I nerd out when I find a great pan – especially if it’s non-toxic, non-stick, and easy to clean. And not only is Greenpan all of those things, but it is also OVEN SAFE. OH YEAH! You can start your dish on the stove, finish it in the oven, and still wipe this pan clean. The dream!
But before I dive into my full review, let’s talk about this salmon with roasted tomatoes recipe. After you sear the salmon in the pan, you add tomatoes, garlic, parley, and butter… which then becomes the most delicious sauce. Stir in some pearl couscous to soak up all that flavor and then top with a drizzle of balsamic glaze for a tart sweetness. I mean, when I say Adam and I can’t stop eating this recipe, I mean we’ve had it twice in one week. SO GOOD!
Salmon with Roasted Tomatoes Recipe
Ingredients
1 tsp avocado oil
2 salmon filets
3 cloves garlic, minced
1 pint grape or cherry tomatoes
1/4 cup fresh parsley, chopped
1 tbsp salted butter (or Earth Balance – that’s what we use!)
1 cup dry pearl couscous
balsamic glaze to taste
Instructions
1. Preheat the oven to 425 degrees Fahrenheit.
2. Cook couscous according to package instructions and set aside.
3. Add avocado oil to your 10″ Greenpan over medium heat.
4. Once the pan and oil are hot, add salmon skin side up. Cook for 1-2 minutes.
5. Flip salmon over to skin side down.
6. Add minced garlic, tomatoes, half of the chopped parsley to the pan, along with 1/2 tbsp of butter on opposites sides.
7. Bake in the oven for 8-10 minutes, depending on the size of your salmon filets.
8. When the salmon is cooked through, carefully remove the pan from the oven.
9. Stir in the couscous and the remaining chopped parsley.
10. Once everything is mixed, drizzle balsamic glaze on top. Serve immediately
