Sausage and Pepper Tacos
Ever been in a recipe rut?!
I love sausage and peppers, but I get so bored with preparing them the same way. So one day I thought I would try to reinvent them somehow. And we all know I love tacos!
This might seem like such a simple and easy shift, but it made ingredients that I use all the time seem exciting again. Who doesn’t like that?!
Here’s how you make it!
Ingredients
1/2 red pepper
1/2 yellow pepper
1/2 onion
1 large clove garlic
a large handful of cherry/grape tomatoes
2 links of chicken sausage
fresh basil leaves
whole wheat tortillas
mozzarella cheese

Chop onion and peppers. I like to cut them into small bite size pieces.
Mince the garlic.
Saute onion and peppers in olive oil. Add salt and pepper.
While those are cooking, chop your tomatoes.
When the onion becomes translucent, add the garlic.
Then add the tomatoes.
Meanwhile, take the sausage meat out of the casing and saute in a nonstick pan. Break it up as it cooks.
(I used hot italian chicken sausage, but you can use whatever kind of sausage you like!)
Once the tomatoes have softened, add fresh chopped basil to the pan.
And then it’s time for the assembly line!
Mmmmm.
Fill your tortilla however you want- cheese, sausage, tomato/pepper/onions, and don’t forget more fresh basil on top!
Roll it up and dig in!
