Easy Shrimp Fattoush Salad
Back when I lived in NYC, I worked at a super cute Upper West Side boutique. The store was open from 10:00am-8:00pm every day, and I worked that whole 10 hour shift pretty regularly. Hey, how else was I supposed to pay my bills? Manhattan is EXPENSIVE! ?
While I did my best to pack my lunches, sometimes you have to order in when you’re at the store that much. And one of our favorite things to get was the Fattoush Salad from a local Mediterranean restaurant. I had never tried it before my friend suggested it one day… but a salad with pita chips on it?! Say no more. I’m IN.
So, when Jewel-Osco reached out to tell me about their Open Nature® line of products, this salad totally came back to me. As a conscious grocery shopper, I really appreciate that Open Nature features honest products, without any artificial or chemical additives. I always look for high fructose corn syrup and partially hydrogenated oil on all my food labels… but don’t worry! You won’t see those ingredients on these products.
I buy my Open Nature products at Jewel-Osco, but you can also find them exclusively at all of the Albertsons Companies family of stores (Albertsons, Safeway, ACME Markets, Vons, Pavilions, Randalls, Tom Thumb, Shaw’s, Star Market, Carrs/Safeway).
Before we dive into the recipe, I am SO excited to also tell you guys that I will be spending a few days in Northern California for an Open Nature retreat with Jewel-Osco in a few weeks! I am pumped to learn more about these products and meet some amazing food bloggers. Especially since their event in Chicago and my trip to Los Angeles with them were so much fun! You can obviously play with these ingredients as you see fit. That’s the beauty of making salads at home! Add more or less shrimp, go crazy with the pita chips, cut the feta out if you’re avoiding cheese – it’s all up to you!
And if you eat a salad for dinner, you clearly deserve some ice cream for dessert! Especially when Open Nature Scandal-Less Ice Cream only has 290 calories per pint! The perfect way to end the day on a sweet note ?
Ingredients
- 1 lemon
- 1 clove garlic
- 1/3 cup olive oil
- 1/4 cup mint leaves
- salt and pepper
- 8-10 Open Nature Shrimp (or as many as you want!)
- 1 container pullman green leaf, romaine, or little gem lettuce
- 1 cup chopped cherry tomatoes
- 1 cup chopped cucumber
- 1/2 cup chopped red onion
- crumbled Open Nature Whole Wheat Pita Chips
- crumbled feta cheese
Instructions
- Combine lemon, garlic, olive oil, mint, salt and pepper in a food processor. Pulse until the mint and garlic are chopped.
- Peel and devein the shrimp, and then spoon a few tbsp of the dressing over them.
- In a separate bowl, combine greens, chopped tomatoes, chopped cucumber, and chopped red onion. Set aside.
- Over medium heat, cook the shrimp for about 2 minutes on each side or until they are opaque.
- Add your shrimp to the salad mixture, pour the remaining dressing over the top, and toss to coat.
- Transfer to your serving dish (if different from your mixing bowl!) and add feta and crumbled pita chips to the salad.
- Serve immediately!
