Spicy Turkey Sausage Ragu
Hey pals, how are we feeling today? In need of some comfort carbs? ME TOO. This spicy turkey sausage ragu is an old favorite of mine because it’s really hearty and cozy… but it only requires 8 ingredients and less than an hour of your time. Instead of hand chopping the onion and carrots, you pulse it in a food processor to get a really fine mixture that adds tons of flavor and sweetness to offset the spicy sausage in your sauce. It’s so good and so easy – and I hope you love it as much as I do!

ingredients
1/2 tbsp olive oil
3 links of raw spicy Italian turkey sausage
1 onion, quartered
2 large carrots, peeled
3 cloves of garlic
24 oz can of crushed tomatoes
salt & pepper
1/2 lb pasta
parmesan cheese
step one
Remove the sausage from the casing. Heat a pan with the olive oil. Add the meat and break it up as it cooks.

Meanwhile, add your onion, peeled carrots, and garlic to a food processor. Pulse until they are finely chopped.

Add that to the cooked sausage and saute for 3-5 minutes over medium high heat.

Add the crushed tomatoes and season with salt and pepper. If you want it spicier, you can add red pepper flakes too. Simmer for 20-30 minutes so the sauce can thicken.

Boil the pasta until it is just al dente. Drain the noodles and add them right to the sauce. Allow the sauce and pasta to simmer together for a minute or two.

Serve with grated Parmesan cheese on top!
