Spinach Artichoke Grilled Cheese
Everybody loves grilled cheese. I think one of the reasons is because it can be made in so many different ways. The possibilities are endless- types of cheese, types of bread, any fillings, etc.
This particular recipe caught my eye because it looked so indulgent.
Here’s how you make it!
Ingredients
Earth Balance
4 slices of bread (we used Seeduction from Whole Foods)
Shredded mozzarella cheese
a few handfuls of spinach
1 small clove of garlic, minced
Olive Oil
Chopped marinated artichokes
Parmesan cheese
Salt and Pepper

Start by sautéing the minced garlic in olive oil.
Once the garlic becomes fragrant, add the spinach.
Cook until it wilts. Don’t over cook it though!
Lightly salt and pepper it and transfer to a plate.
Spread Earth Balance on 4 pieces of bread. Place in a hot pan to toast.
Add shredded mozzarella on each piece.
Cover the pan if you need to encourage the melting.
Once the cheese is mostly melted, you are ready for the next step.
Top two pieces of the bread with the sautéed spinach and a sprinkling of parmesan cheese.
Top that with the chopped and marinated artichokes.

Put the other pieces of bread on top to complete the sandwiches. Press down with a spatula, so the melted cheese can bind it all together.
Cut it in half for easy eating.
