Spinach Artichoke Pasta
So what can you do with the Artichoke Pesto I showed you yesterday?
Why not put it over pasta? And match it with artichoke’s love – spinach!
Here’s how you make it!
Ingredients
1/2 of this recipe for Artichoke Pesto
1 bag of spinach
1 lb of pasta

Rinse the spinach. If they are large leaves, tear them up a little.
Drain the pasta and then add it right into the bowl on top of the spinach. The heat will wilt the spinach.
(I used white pasta, but next time I will try whole wheat or brown rice pasta and let you know how it goes!)
Now take out your tupperware of Artichoke Pesto.
Dump it right in there.
Add a little pasta water or olive oil if it’s too thick for you.
And serve.
This totally satisfies my spinach and artichoke cravings.

These pictures are amazing! I JUST ate and I am hungry just looking at them. I cant believe you just add fresh spinach to the freshly drained pasta- so easy! I will have to try this and let you know how it goes. Thanks!
